Duck with mlinci pasta
Ingredients (for 6 people):
- a medium-sized young duck
- 250 g of flour
- 1 whole egg
- 4 tablespoons of olive oil
- 50 ml of milk, salt
- 1 tablespoon of breadcrumbs
1. Salt the duck, add oil and roast slowly, basting it from time to time.
2. Make fresh mlinci pasta: pour hot milk with salt into flour, add oil and a beaten egg. Knead to form a dough that will be rather dense, form balls and let them rest for 30 minutes. Roll out the dough until it is roughly 5 times the thickness of regular pasta. Put in the oven set at 180°C until it dries and becomes light golden brown. When it cools down, pour hot water on it until it is rehydrated, add the fat rendered from the duck and breadcrumbs.
